It’s August which means one thing… give me all the pumpkin spice everything! If you are reading this then you are my people. I have searched high and low for the perfect fluffy pumpkin muffin recipe that DOES NOT contain eggs. One of my littles has an egg allergy which can make it difficult at times to find recipes that taste the same as the ones that contain eggs. I love a good challenge so I took to the kitchen determined to create the best fluffy egg free pumpkin spice muffins. There were a few flops along the way but my persevence prevailed. Now you can celebrate the sweet victory with me and make these for yourself. You might want to double the recipe and share with them a friend because that’s what Jesus would do.
Egg Free Pumpkin Spice Muffins
- 1 box of Duncan Hines Spice cake mix
- 1 15 oz can pumpkin puree
- 1/2 cup water
- 1/2 tsp baking soda
- 1/2 tsp baking powder
Preheat oven to 350. Combine dry ingredients first then mix in wet ingredients. Spray muffin tin with Bakers Joy spray, spoon in mixture. Bake 20-25 minutes.
