It’s August which means one thing… give me all the pumpkin spice everything! If you are reading this then you are my people. I have searched high and low for the perfect fluffy pumpkin muffin recipe that DOES NOT contain eggs. One of my littles has an egg allergy which can make it difficult at times to find recipes that taste the same as the ones that contain eggs. I love a good challenge so I took to the kitchen determined to create the best fluffy egg free pumpkin spice muffins. There were a few flops along the way but my persevence prevailed. Now you can celebrate the sweet victory with me and make these for yourself. You might want to double the recipe and share with them a friend because that’s what Jesus would do.
Egg Free Pumpkin Spice Muffins
Preheat oven to 350. Combine dry ingredients first then mix in wet ingredients. Spray muffin tin with Bakers Joy spray, spoon in mixture. Bake 20-25 minutes.
I’ve tried so many recipes over the years because I’m a sucker for finding THE best recipes because I want my children to remember how mama made the best (insert dish here) ever! Maybe it’s vain, maybe it’s because I come from a long history of amazing cooks and bakers (fun fact: my grandmother was famous for her dishes in the town we grew up in. Everyone loved my grandmothers green dip), or maybe I just want my children to think mama was amazing in the kitchen, or D all of the above. Every time I share pictures of these cookies on social media my inbox blows up with request for this recipe. I’m finally going to share it here so you can all have it anytime you need it. Here it is!
Preheat your oven to 350. Use parchment paper on your baking sheet. Mix dry ingredients (flour and baking soda) in a bowl, mix the other ingredients together (minus the chocolate chips), combine all, then add chocolate chips! Chill in the frig for 30 minutes or freezer for 10 minutes. Roll into small balls (the size of a quarter) bake for 8-10 minutes depending on your oven. I always set my timer for 8 minutes just to be safe. If they need another minute or two then I’ll add it. You want to make sure the bottom of the cookie is a nice golden color when it’s done.
